About

Dr. Nicolle Fernandes is a Professor and Director of the Nutrition and Culinary Management Program at LaGuardia Community College. She is a registered dietitian in the United States and India. Prior to moving to the United States, she served as a dietitian at the Universal Heart Hospital and Talwalkar’s Health Commune. Lecturing and coordinating the Applied Nutrition program at the Institute of Hotel Management, Catering Technology, and Applied Nutrition in Mumbai, India prompted her to pursue her doctoral studies in the US. She earned a Ph.D. in Nutrition at Texas Woman’s University in Denton, Texas, where her doctoral thesis was titled “d-δ-Tocotrienol-mediated cell cycle arrest and apoptosis in human melanoma and prostate cancer cell lines.” Upon completing her doctoral studies, she was a postdoc at Nestlé Nutrition R&D Centers in Hopkins, Minnesota, within the Aging Care platform. Her research interests include the impact of nutrition on cancer, obesity, falls and fracture in the geriatric population, herbs and spices, culinary nutrition, hunger, food insecurity, and sustainability in the food arena.
